TANGERINE, GRAPEFRUIT, LEMON AND ORANGE DIGESTIVI

Zest of 5 tangerines in wide pieces
Zest of 5 grapefruit in wide pieces
Zest of 5 lemons in wide pieces
Zest of 5 oranges in wide pieces
10 cups sugar
10 cups water
3 bottles Nandini grappa

Make simple syrup of 10 cups sugar and 10 cups water by heating both together until clear. Allow to cool

Arrange 8 quart bottles and place 1/2 of each zest in each bottle. Divide simple syrup among bottles and top each with grappa.

Yield: 8 servings
